Berry Pancakes with Maple Syrup Recipe:

TIME TAKEN: 1 HOUR
INGREDIENTS
135g Self-rising flour
3g Baking powder
1 Burford brown eggs
12g Caster sugar
140g Whole milk
50g Longmans Salted butter soft
Pinch of table sea salt
Mixed fresh seasonal berries (strawberries and raspberries are particularly good at this time of year!)
Good quality Canadian maple syrup to taste
METHOD
- Sift the flour in a large bowl and then add the baking powder, the caster sugar and a pinch of table sea salt
- Beat the eggs gently with the whole milk and the soft salted butter
- Add the liquid to the flour and mix and whisk until all the lumps are dissolved
- Leave to rest for 30 minutes to activate the raising agents
- Cook the pancakes on a low-medium heat for 3-4 min per side in a way they are perfectly cooked (spongy and fluffy)
- Serve 3 pancakes with a good amount of high quality of Canadian maple syrup and mixed berries
- The final flourish: garnish with a generous sprinkle of icing sugar and bit of butter on the top
